Jambalaya

Ingredients

  • 4 grilled chicken breasts, diced
  • 1/2 lb hot pork sausage
  • 1 lb smoked sausage
  • 1/4 cup lean ham
  • 2 cups smoked ham
  • 1 large chopped onion
  • 2 stalks celery, diced
  • 1 bell pepper, diced
  • 1 lb can tomatoes (with liquid)
  • 1 can tomato sauce
  • 1 1/4 cup regular rice (for 6-8 people)
  • 1/2 tsp thyme
  • 4 cloves minced garlic
  • 3 bay leaves
  • 3-8 cups chicken broth
  • 1/4 cup parsley, chopped
  • 4 green onions, chopped
  • salt, pepper and tabasco to taste

Directions

  1. Pour some oil in pan and sauté sausages and ham several minutes.
  2. Add and sauté onion, bell pepper and celery.
  3. Cook until tender.
  4. Add bay leaves and thyme.
  5. Add rice and stir until coated.
  6. Add tomatoes, tomato sauce, meats, broth, garlic and salt, pepper and Tabasco. Bring to a boil.
  7. Cover and let simmer about 30 minutes or until rice is done.
  8. Before serving add green onions and parsley.
