Ingredients
- 4 grilled chicken breasts, diced
- 1/2 lb hot pork sausage
- 1 lb smoked sausage
- 1/4 cup lean ham
- 2 cups smoked ham
- 1 large chopped onion
- 2 stalks celery, diced
- 1 bell pepper, diced
- 1 lb can tomatoes (with liquid)
- 1 can tomato sauce
- 1 1/4 cup regular rice (for 6-8 people)
- 1/2 tsp thyme
- 4 cloves minced garlic
- 3 bay leaves
- 3-8 cups chicken broth
- 1/4 cup parsley, chopped
- 4 green onions, chopped
- salt, pepper and tabasco to taste
Directions
- Pour some oil in pan and sauté sausages and ham several minutes.
- Add and sauté onion, bell pepper and celery.
- Cook until tender.
- Add bay leaves and thyme.
- Add rice and stir until coated.
- Add tomatoes, tomato sauce, meats, broth, garlic and salt, pepper and Tabasco. Bring to a boil.
- Cover and let simmer about 30 minutes or until rice is done.
- Before serving add green onions and parsley.
