Directions
1. Take a bowl or pan, I use a bowl about 9” x 9” x 3”. Just something big enough to hold this conglomeration. It will raise a smidgen.
2. Dump 2 cups of stone ground cornmeal
3. 3 t. of baking powder
4. 1 cup or more of sour cream
5. 1-1/2 t. of salt
6. 1 can cream style corn
7. 1/2 cup of Wesson oil
8. 3 eggs
9. 1 medium onion, diced
10. 6 to 10 jalapeno peppers, I like to use 10 or more
11. 1/2 lb. Sausage, Ham or Bacon diced
12. Block of sharp cheddar cheese grated. Enough to mix in with the mixture and spread on top (1 cup).
13. Stir all these ingredients together well.
14. Sprinkle the top with cheese.
15. Grab a handful of cornmeal and sprinkle lightly over top. This will give the top a crunchiness and a coarse look.
16. Bake @ 350 deg F for 1 to 1 ¼ hours. Cool for 15 minutes.
